V-CAP (Starch Sodium Octenyl Succinate) Introduction
V-CAP (Starch Sodium Octenyl Succinate) is prepared by treating starch with octenyl succinic anhydride (succinic acid and octanol). The ingredient of SSOS is a modified acetyl-modified starch ester. It is used as an emulsifier, stabilizer, thickener, and microcapsule embedding medium.
