V-CAP (Starch Sodium Octenyl Succinate) is prepared by treating starch with octenyl succinic anhydride (succinic acid and octanol). The ingredient of SSOS is modified acetyl modified starch ester. It is used as an emulsifier, stabilizer, thickener, and microcapsule embedding medium.

Starch sodium octenyl succinate (SSOS) is predominately used as Thickener. A substance is used to increase the viscosity of a mixture while not changing any other properties.
Emulsifier: Used in food to maintain a uniform mixture between two or more unbendable mixtures. For example, a mixture of oil and water. Predominately used to thicken drinks, yogurt, cheese, canned food, frozen fruit, pies, jellies, gravy stuffing, and thick food, canned vegetables, fishes and meat, salad dressings, sauces, and confectionery.
